Caramel Filled Chocolate Cookies

I couldn't believe how great these cookies were straight out of the oven! This is my new favorite cookie recipe, hands down. Like some others, I covered my hands in cocoa while rolling the cookies and I had no trouble at all. I made half the batch using peanut butter cups and half with Rolos. Both were good, but I definitely liked the original caramel ones the best. Overall a great recipe, no modifications needed.

Lime Cheesecake Pie

This was a simple and tasty recipe, though I did need to make some modifications. I followed the original instructions regarding refrigeration, but it still didn't turn out solid enough. I ended up freezing it, which gave it a better texture. However, if you do freeze it, be advised that it needs to sit at room temp. for 10mn or so to thaw it a bit before serving.

Homesteader Cornbread

This was a good recipe, but nothing that I was overwhelmingly pleased with. If you're looking for a good go-to recipe for cornbread, this would be one to keep on-hand. Be advised, though, that it doesn't keep well. Twenty-four hours after baking it the bread was already inedible.

Krissy's Best Ever Corn Muffins

This recipe was a big hit. The honey and corn kernels set it apart from standard corn bread. I also substituted wheat flour and made honey butter to put on top. It turned out very well. Just be sure to make it the day of, because if it sits too long the corn kernels harden and get chewy.

Banana Bread

This is such a simple recipe and always delicious. I substitute 50% of the white flour with wheat flour and always use at least one extra banana, as well as add some cinnamon. This recipe also makes excellent muffins; just be sure to reduce the cooking time.

Egg and Cheese Puffs

I made this recipe for brunch one day. We enjoyed it, but I would change a few things if I were to make it again. First of all, I would use paper muffin cups to line the pan because, even with greasing, these were fairly difficult to remove from the pan. I would also use a cheese with a little more kick, like a sharp cheddar or even a chipotle cheddar. I would also replace the peppers with jalapenos or something spicier. However this is all just personal preference. While good, it was a bit bland for my tastes.

Bake Sale Lemon Bars

I've made this recipe a few times and, while good, I've always had a bit of trouble with it. The crust is difficult to cut through and the topping never sets very well. These bars taste great, but end up being very messy and not visually appealing, though it could very well have something to do with my oven or the pan I'm using. I think I'll try a new recipe the next time I'm making lemon bars, though.

Very good recipe! I used plain wheat bread while making this and it still turned out well. Next time I make it I plan on using a bread more suited for this recipe, though.

Granny Kat's Pumpkin Roll

Great recipe. I was a little hesitant to try it, worrying that it would fall apart on me, but I had no problems whatsoever. However, the second time I made it I didn't have any baking sheets with raised sides available, so I used one that was a bit deeper. Do not do this! It did not bake up well and I had to throw it away. In conclusion, great recipe, but don't try it if you don't have the right pan!

Chicken Pesto Pizza

This recipe is fantastic. I've made it a few different ways - with chicken I cooked on the stove top, with mushrooms instead of chicken, and with pulled pieces from a rotisserie chicken. The one with the rotisserie chicken was BY FAR the tastiest. Also, I know that some have commented that they subbed mozzarella for fontina, but, having made it with both, I can say that making it with fontina tastes much better (even though it's still good with mozzarella). I found fontina with the specialty cheeses at my local grocer and, while more expensive, it is well worth it.

Early Morning Oven Roasted New Potatoes

What I enjoy the most about this recipe is how versatile it is. If I don't have rosemary on hand, I can throw a different combination of seasonings on there and it'll still turn out great. I also use this recipe as a base to make oven-roasted fries to go along with dinner - I just cut the potatoes into longer slices and spice with chili powder, garlic powder, and onion salt instead of rosemary. This is a great recipe to keep on hand.

Banana Bread French Toast

I love banana bread and french toast, so it was only natural that I try this recipe. The condensed milk really made the recipe - the batter stuck on really well. This dish is also great cold with fresh sliced strawberries on top. The only advice I have is to not slice the bread too thick, as the batter cooks up fairly quickly.
