I am 24 years old and I live in Colorado with my wonderful boyfriend Jon and our dog Ruby. I am all about healthy food and a balanced diet. I hardly ever look at recipes, if at all, unless I am baking. If I do, it's usually to get ideas for ingredients. I would love to be able to put some of my dises in to recipe form, but I rarely have any clue what quantities are involved! For example, I just made the most divine vegetarian stuffed shells with bolognese sauce, but I would be hard pressed to write everything down!
Quinoa and Black Beans

This was my first time making Quinoa and I just love it! I soaked it for 45 minutes and simmered it for a half hour plus, and it turned out great. I added diced carrots for added crunch. It would also be great with peppers, celery or tomatos. I also did a soy-lime vinegrette on it as I plan on having it as a cold salad. I am going to have it at work with some marinated tofu. This was so quick and easy, and so versatile!

Portobello Mushroom Burgers

AMAZING!!!! wow, this was my first time grilling caps as burgers and they were fantastic! Even my mushroom-hating boyfriend begged me for more! Everyone who had one was blown away! I served them on grilled whole wheat buns with arugala, tomato slices and a garlic-herb aioli. i will definitely make them again soon. I will also go ahead and say I like them better than most burgers. Thank you!

I used a little less sugar, but otherwise didn't change a thing and they turned out very soggy. I would have liked a cakier, fluffier cookie, but it might have been the slight reduction of the sugar. next time I would use less sugar and less oil.
