I absolutely love to bake and experiment with new ideas. I never knew I could create so many different versions of banana bread! I grew up on good 'ole southern cooking, but since I joined Weight Watchers in Jan, I've learned how to eat healthier and how to manage my portions. Glad to be here - looks like a great site!

I love recipes that don't require a lot of ingredients, so this one caught me eye. It's not a recipe that would be high on my list, but that might be because of some changes I made. I used only 1.5 cups of finely crushed PECANS and used VANILLA flavoring. The big difference came, I think, from the size pan used. I used a 9x13, which resulted in a thinner bar that required less time to bake (only 35-40 min). Mine didn't look anything like the picture, but it was okay. The topping was like of a lacy, crunchy texture, while the inside of the bar reminded me of pecan pie. I liked the fact that it wasn't overly sweet. Also, if you're counting Weight Watcher points, I figured out that if you cut the recipe into 12 servings, it's 5 points per serving. Again, it's an okay recipe, but it may be quite a while before I make it again.

This really was quick and easy and quite tasty - but it's high in fat grams, so if you're watching your weight or counting those Weight Watcher points, you might want to eat this only on special occassions. I did make some substitutions, trying to use up some ingredients in the cupboard. I used a can of SPAM instead of sausage, so that saved some time - all I did was dice it and sprinkle it on top of the bread. As for the bread, I had 3 stale hot dog buns that needed to be used up, so I used them and 3 slices of regular bread - did not cut the crust off. The only other changes I made was using fat-free milk, sprinkled some dry minced onion on top before adding the egg/milk mixture, and also added paprika to the seasonings. Since I increased the servings to 6, I used a 9x13 pan and baked for 40 minutes. It really was very good; my husband really liked it. I will be making this one again. Using the subs I made to the recipe, for 6 servings, total calories per serving is 455 and total fat grams is 26. That equates to 11 Weight Watcher points per serving.

OMG - this is a FANTASTIC dish! I used 7 slices of peppered bacon didn't have celery seed, so just tossed in a little celery salt. Rather than the 12 servings indicated, I calculated my Weight Watcher points based on eight 1-cup servings, and each serving was only 5 points! I made a pork loin roast and brussel sprouts to go along with the salad - best meal I've had ina long time. You don't have to look any further for the best hot German potato salad recipe because this is it! I will most definitely make it time and time again.
