I used the precut celery/onions (1 c ea) plus 2 extra celery stalks. I sweated together w the bell pepper and 1 tbsp butter and 1 tsp minced garlic. I tried once with shredded chicken and it got lost in the rice so this time I used 1.5 lbs 1" cubed chicken (dipped in seasoning and pan fried), 1 lb jimmy dean mild sausage cooked in a fine crumble, and 1 lb beef sausage. Followed the recipe but added 1 can diced tomatoes, 2 tbsp Worcestershire, 1.5 tsp chachere's, 1/2 tsp thyme as recommended, 1/2 tsp garlic powder. To prevent rice mushiness I steamed it for 20 minutes in the broth liquids then added to the pot after (about half cooked).

I did not have vanilla, so I used 1 tsp of almond extract and .5 of maple. I did not add the nuts. Matt said he liked this cookie better than the family recipe.

I used 5 pieces of garlic, added 1 tsp of Tony C's, 1 tsp garlic powder in addition to the spices in the recipe. Served with jasmine rice. Good flavor.

Tomato Salsa without Onions

The instructions are a little bit vague, so here is what I did. I sprayed a sheet pan with Pam and placed the pepper and six cloves of garlic on it. I figured that some of the garlic could get too burned during the broiling process, so I put a few extra in in case some got ruined (& they did). I kept in the oven at broil which is 550 degrees for 12 minutes, turning after five minutes, then five more minutes, turning, and taking out after two more minutes. I let everything cool, cut the stem from the pepper, then added everything to the food processor as directed. I used five rather large tomatoes and my salsa is very red colored, not green like in the photo at all. The taste is quite bland. I agree with the other reviewer who said it needs salt. I added about a half a teaspoon but there is still something missing. I might add a bit of olive oil, maybe a vinegar, jalapeño, and see where it goes from there. Good luck.

I halved the recipe since only wanted one loaf. Added choc chips on top. It baked beautifully but needs salt, it was lacking on banana flavor maybe add 1 or 2 more next time
