This is my all time favorite recipe for split pea soup. I have tried several recipes and I always go back to this one. This recipe also works well in my pressure cooker. I just follow the manufacturer guidelines for the amount of time the soup needs to be cooked for. Depending on the make and model of your pressure cooker there may be an adjustment in the amount of water (or chicken stock) you use. Note: My personal preference for this recipe is: 1. Simmering my peas for two minutes and letting them sit for 1 hour instead of soaking them in cold water overnight. I found that it gives my soup the perfect consistency. 2. Instead of using just water, I add chicken bouillon (1 tsp per cup) to enhance the flavor.
