I've been cooking for almost as long as I can remember , though for years I wasn't too adventurous. A few years ago, I started cooking for friends who volunteered to bring all the ingredients, if I'd do all the cooking. We got together a lot of Friday nights and tried a whole bunch of new things. Since then, I've become a sucker for good cookbooks and have been working hard to figure out what really makes good recipes good. It helps having a resource like I've really benefited from the comments and suggestions left by other cooks, as well as the recipes themselves.

Fast Eddie's Deadly Hominy Casserole

Beautiful, easy and delicious. Since my friend, Fast Eddie, gave me this recipe many years ago, I've been asked to bring it to every family Thanksgiving meal. It's become a new tradition.

Robo's Single Serving Shrimp, Bacon n' Grits

Speedy version of a classic dish that's great, made with leftover shrimp, or bacon. Wonderfully satisfying for any meal. Made with ingredients you probably already have on hand.

Bubba's Rice Consomme

Somewhat decadent Southern comfort food that goes particularly well with chicken and turkey. My mother (nicknamed Bubba) made this simple dish for many, many years. The flavor won't disappoint.

Jill's Super Tasty Broccoli Salad

Near perfect broccoli salad. Not for dieters, but wonderful for the rest of us.

Robo's Whisky a Go Go Chicken

Deliciously easy, sweet and spicy chicken.

Robo's Spicy Chicken and Jicama Stew

A spicy hot, comforting stew, chock full of flavors, textures, and colors. The crispness of the Jicama adds a special surprise texture.

Robo's Asian Dim Sum Style Shrimp Stuffed Peppers

This is one of my very favorite dishes when eating Dim Sum at a local Asian restaurant. This recipe is the result of much trial and error and experimentation. I'll also have to thank several anonymous women at a nearby Asian grocery store for their breakthrough hints and advice in making this authentic.

Robo's Better Than "Suddenly" Pasta Salad

Forget about ever buying prepackaged pasta salad again. This is the best ranch and bacon pasta salad recipe ever, and is made using things you probably have on hand! It's fast, super delicious and impossible to mess up!.

Robo's Lo-Cal Tuna, Pineapple, Cottage Cheese and Basil Salad

I've been mixing tuna with my cottage cheese at lunch for years and I've also enjoyed pairing fresh basil with pineapple. One day, I put it all together and came up with this recipe. Sometimes, I eat it in a bowl, sometimes with crackers, or bread, but anyway it's eaten, it hits all the high notes and is wonderfully satisfying. Not only that, but the ENTIRE recipe is only 270 calories, or 135 per serving!!

Robo's Savory Jalapeño Mozzarella Cheese Cookies

A very quick and super tasty alternative to your everyday bread.

Bubba's Corn Chowder Lite

Wonderful flavor and is made of things you probably already have on hand. Very inexpensive to make and goes great with crackers, or homemade bread.

Robo's Simple Hearty Beef Stew

I love hearty soups and stews. I've made stew a few times a year for the last 40+ years and have experimented with lots of different ingredients, like wine, beer, chicken/beef broths, seasoned salt, chopped chicken, pork, beans, peppers and exotic vegetables. Lately, I've gotten back to keeping it simple ... and I love it. IMHO this is really hard to beat.
