Michelle A

I was a latchkey kid growing up and my older sister was not very interested in the kitchen. I had to feed myself, so I started making things that were simple...hamburgers, ground beef and macaroni, chocolate chip cookies, etc. As I got older and moved out on my own, I realized that I had a special talent and would often invite my other single friends over for dinner. They seemed to enjoy it, so I kept at it and I feel like I am constantly improving with each and every dish.
Chicken Riggies I

This was absolutely the best pasta I have ever had! My husband doesn't like peppers so I omitted them. I also added a whole lot of garlic to the chicken as I was sauteeing it and even more to the sauce as it simmered. It was absoltuely delicious. This will be a weekly staple recipe in my house. Tastes great as leftovers, too!

FANTASTIC! I absolutely LOVED this recipe and my husband asked me to put it on my regular menu! I am a sauce loving person so I doubled the sauce (which is fabulous) and poured the second batch over the pork chops. When there was only a few minutes left to cook, I removed the pork chops, sprinkled some shredded longhorn cheddar cheese on top, replaced the pork chops and baked until the cheese was bubbyly! I will definately make this again, it is a keeper! Not only delicious, but simple. My three year old loved it, too! Thank you for a great recipe, Monica!

Spicy Tortilla Roll-Ups

This is fabulous. An aquaintance of mine from many years back used to make these for parties and I was glad to come across the recipe again. For all of you out there who have a problem with the oozing, after mixing all the ingredients together, refrigerate for about one hour before spreading on tortillas. If the mixture starts going soft again, stop and refrigerate some more before spreading again, I found this helps alot, especailly for those of you who like it to be thick. DELICIOUS!

Kitchen Sink Cookies

Absolutely delicious and sinful! I did not have any pecans so I used chopped walnuts instead. To me nuts in cookies are great so I don't care which kind I use. But I did get distracted by my newborn baby during the preparation of the cookies and forgot to add the oats! I noticed it when I came to write my review and by then I had made two dozen, but they still tasted great! I went back and added the oats because I really wanted them to look like a meaty cookie and for them to live up to their name. Try these cookies! They are great!

Rempel Family Meatloaf

This meatloaf is excellent! The only thing I changed was very minor. I used 1 TBSP. BBQ sauce and 1 TBSP. steak sauce instead of the called for 2 TBSP's of steak sauce. I also mixed a little ketchup and BBQ sauce and brushed the top of the loaf before baking. This meatloaf is part of our weekly menu, my husband and daughter both love it! The onion soup mix, shredded cheese and the crushed crackers make this meatlof stand out.

Very good and extremely easy! I used asiago cheese since parmesan does not melt very well and I kow asiago does. I also doubled the recipe to use with one package of fettucine. This recipe will impress your friends who will think you slaved for hours in the kitchen!

All I can say about this chicken is OH-MY-GAWD! It is so delicious and so easy! Don't make any changes to this recipe, it's perfect as it is. I followed the alfredo sauce recipe on this site and made fettucine alfredo to go with this chicken. My husband took one bite of the chicken and said "why do we ever eat out!?" You must try this recipe! It's a keeper! The absolute best thing is how easy it is to make such a tasty dish!

Creamy Peanut Butter Fudge

Very good, exceptionally easy, delicious and creamy. But unless you have many avid peanut butter lovers in your family, I suggest halving the recipe. I am obviously the only one in my family, aside from my 90 year old great aunt, who likes peanut butter so I was stuck with all this fudge! I did give it to my neigbors as little Christmas gifts however, and they enjoyed it!! Great recipe!

This recipe is FANTASTIC! The best thing is how easy it is to prepare since it is made with cake mix rather than from scratch. I make this recipe for special occasions and cut them into huge slices. Everybody loves them!

Wonderful! These cookies did not last one weekend around my house. My two year old and seven year old loved rolling the cookie dough and coating them in the cinnamon/sugar. In reading other reviews, I agree I would lower the oven temperature to about 375 instead of 400, but I cooked a whole double batch at 400 and they were still great! This recipe is a keeper!

Great recipe, a real crown pleaser! Even for those picky eaters because they don't know they are eating spinach! I gave this recipe to a friend and she makes it weekly.
