Cream of Tomato
Best done with fresh ripe tomatoes, but also very good with canned tomatoes. If you use fresh herbs, you will need more than dried (in proportion, 3 times more). I ate this soup for the first time when I visited an aunt. She made this just for me. Over the years, I made my own version to match the taste I remembered. Here it is. Bon appetit.
Easy Potato Sausage Soup
This is what I make on grocery shopping nights since it is easy to prepare and is very tasty. I generally double the recipe since my family loves it so much. Don't forget the garlic bread!
Roasted Pumpkin Soup
Serve with crusty bread and a dollop of extra cream for decoration. Try to find a really dark orange-colored pumpkin--it will look lots better. Enjoy!
It's easier than you think to make a delicious savory miso soup at home!

Dashi Stock (Konbudashi)
Dashi is the basic stock used in most all Japanese cooking. Dashi stock is the base for miso soup. This recipe is for a Konbudashi, which is made with konbu (dried kelp/seaweed) and bonito flakes (a dried fish which has been shaved into flakes.) There are many variations of dashi, but this is probably the most common.
This is a recipe from my mother's German-Mennonite ancestry. We eat it with hard-boiled eggs diced and added to the soup, for a meal in a bowl. Delicious!
Easy Tortellini Soup
Quick and easy to make this hearty, zesty soup. Makes a great meal with garlic cheese bread and a salad.
Day-After-Thanksgiving Turkey Carcass Soup
Veggies, chunks of turkey, and leftover stuffing make this soup a winner!
Onion Soup Mix
Way cheaper to make it yourself than buy the packets. This recipe makes the equivalent of one packet of soup mix. If you're adding this to a liquid, the bouillon cubes don't need crushed.
