This recipe was easy to follow, used simple ingredients, and tasted delicious! I added half a bag of frozen California Blend vegetables(carrots, broccoli, and cauliflower) about ten minutes after I added the potatoes. I served it over a scoop of rice in a bowl. It was great!
My husband said" This cake is amazing! And you made it from scratch!" This turned out to be the best cake I've ever made. It was light, fluffy, and moist. I used the batter to made an 8x8 in double layer cake. To compliment the orange juice in the batter I put a layer of thinly sliced orange, well drained pineapple chunks, and lemon zest in between the cake layers. I used evaporated milk instead of condensed milk and added 4 tablespoons of sugar for sweetness (this may not have been necessary). I also increased vanilla extract to 1 tablespoon, and added 2 tablespoons white vinegar as recommended by a fellow user. I highly recommend this recipe!
Surprisingly amazing! I added zucchini and served it over Rotelle pasta for my husband and he loved it. I ate mine over a bed of spinach and grated carrot and I loved it. I substituted pepper jack cheese cut into small cubes for the blue cheese and it worked nicely by giving it a little extra spice. I baked it for 15 mins at 400 degrees F. We'll be eating this again. :)
