My daughter and I loved this meatloaf! I did make a few changes, like others mentioned, such as adding Worcestershire sauce to the meat mixture, a half sleeve of crushed whole wheat Ritz crackers to my garlic & herb breadcrumbs, and doubling the ketchup/mustard/brown sugar. I also seasoned the meat (measured with my heart) with salt/pepper, season salt, garlic powder, and fajita seasoning (trust me!) and sautéed the onion and one bell pepper prior to adding them. I formed the loaf in a casserole dish lined with foil and baked it on the middle rack for about 1 1/2 hours. It came out PERFECT.
