Totally satisfied with this recipe although I did not follow the measurements or the ingredients..Ok, so I'm really satisfied with what I came up with.. I cut the measurement down to my needs and omitted the salt and cream and used margarine instead of lard... Beautiful!

My cake was not as light and fluffy as the ones in store, a bit on the hard side,(shame on me) and the frosting was a bit sweet for my taste, but I don't like a sweet frosting. I will try this again anyways since it was fun. Thank you!

I can't even tell you how wonderful I think this recipe is...Very simple and delicious...The first day, I found the icing too sweet also, but it seemed to settle down the day after. I added Amaretto liquer where it called for coffee. I think I am addicted, I have made 4 logs in a week...Yummy!

Chocolate Zucchini Cake

I followed this recipe exactly except for two changes. I had grated an extra cup of zuccini and omited 1/2 cup oil. The cake was delicious, moist and not overly sweet which is good for me . I used cream cheese-vanilla-icing sugar-soya milk for an icing to give the extra sugar boost and it looked like a cake out of a magazine. Thank you very much....

Surprise Banana Cake

I try not to alter recipes so I can see how they turn out..but I did this time to try and get a "true" cake texture. It turned out perfect and true. I made a simple icing sugar frost. Measurements are the same unless indicated. Use electric mixer to beat margarine and sugar then add eggs. Add flour and some milk (about 1/4 cup) to make a more loose batter. Beat some more. Add vanilla, soda, salt and 1 tsp baking powder. Beat some more. Mash 2 bananas into mixture. Baked in round pan at 350 until done about 50 minutes.
