Mushroom Spinach Salad

I thoroughly enjoyed this salad. I did substitute the water chestnuts for a jicama and it turned out just fine. The salad dressing was quite tasty! If you like a little extra sweetness to your salad, try adding in a small pear.

I love this recipe. I originally found it almost 5 years ago and my husband and friends have been begging for them ever since. Be sure to cream the sugar and butter together first to make light and fluffy, then add other ingredients. Also, only cook 8 minutes, then let them rest on the pan for 2 minutes before moving cookies to cooling rack.

I use this recipe quite frequently. It's always a hit! I like to add potatoes, carrots, parsnips and celery with the roast.

Fluffy Whole Wheat Biscuits

This is a very delicious and light biscuit. I did make a couple changes though. I added 3-4 tablespoons of buttermilk powder and just enough water to bring it to the right consistency, which was just a little less than 1 cup. I mixed everything in the food processor using the pulsing, and finished off by kneading a couple times on a floured board. The secret is to incorporate all the ingredients until just moistened.

I made this yesterday for a dinner party and everyone loved it. Best apple pie I have ever tasted. I did add 1 teaspoon of cinnamon because I couldn't resist, but I can see that this would be excellent just as written. I will be making this my only apple pie recipe!
