Air-Fried Shrimp Fajitas

Rating: 4.5 stars 3
These shrimp fajitas take on a different technique as they don't use a typical liquid marinade, and are air fried. You can use your preferred fajita seasoning and serve with toppings of your choice, like sour cream, Oaxaca cheese, and avocado.

Chorizo Steamed Clams

Rating: 5 stars 25
I have always called this recipe for steamed clams and chorizo "Spanish clams," as it seems I've seen some variation of it on the menu at every Spanish restaurant I've visited. Sometimes they use beer, or white wine, or sherry — and many varieties of clams can be used. But the common denominator is the spicy, Spanish-style chorizo. I like to serve these with grilled or toasted bread to soak up the glorious broth. Serves 2 as a main course or 4 as an appetizer.

A scallop pasta dish featuring an easy but elegant lemon-butter sauce.

Father-in-Law's Scallops with Sun-Dried Tomatoes and Bacon

Rating: 4.5 stars 33
My father-in-law made this for us on a visit, and we had to have the recipe. Sauteed scallops with sun-dried tomatoes, double-smoked bacon, garlic and a white wine cream sauce are served over angel hair pasta. This dish could be served in a fine restaurant and yet it is so simple and easy to prepare. Delicious!

Homemade Teriyaki Shrimp

Rating: 4.5 stars 8
If you want to serve this dish on rice, you need to start the rice first, because it comes together quickly! I used coconut aminos, a sub for soy sauce, that is a bit thinner in consistency and sweeter in taste than soy sauce. Sweet and full of umami, this recipe works as a light lunch, or as a main, with some steamed broccoli or a salad as a side.
