This way of cooking cauliflower is an excellent substitute for most rice dishes for those looking to add more veggies and cut back on grain. Cauliflower is mild and is a great compliment to the Mediterranean flavors of lemon and mint. The recipe is both SCD and paleo diet-friendly. We served this underneath grilled lamb kabobs. It was a big hit!

Creamy Kohlrabi Soup

This kohlrabi soup recipe is so simple to make. My husband loves it so much that he planted kohlrabi in our garden. Kohlrabi looks like a small green turnip; its taste and texture are similar to broccoli stems or cabbage hearts but milder and sweeter. Serve this soup with your favorite bread.

Banana Empanadas

I love banana empanadas and I wanted to see if I could make them. This is what I came up with and I wanted to share. They're pocket pies. You can make them with other fresh fruits (peaches, apples, apricots, pears, etc.) or with canned fruit filling. The good thing about bananas is that you don't have to add any sugar and the empanadas still taste great. If you use other fresh fruits you may want to consider adding about 1 tablespoon of sugar to the inside of each pocket. You may also sprinkle them with cinnamon-sugar as soon as they come out of the oven.
