I made a few substitutions based on what I had on hand (bacon grease for oil, sweet potatoes for yams, balsamic vinaigrette for red wine vinegar) and ate it hot instead of chilled. Good enough to eat as a main dish instead of a side!

This is seriously one of the best things I've ever eaten in my life! I made a few substitutions based on what I had on hand: apple cider vinegar for rice vinegar, grated ginger for ginger juice, and shallots for green onions. I also added all of the glaze at once instead of saving some for the end, which I did by mistake but I would do it exactly the same way next time! I plan on trying the glaze on lots of other things. Heck, I might just make some and eat it with a spoon.

This soup is amazing! I used celery root instead of celery and pinto beans instead of great northern because that's what I had on hand. Definitely making this again!

Creamy Curried Root Vegetable Soup

Pretty good, but I would add some more spices next time. Side note, adding a little extra flour and an egg (I know, it's supposed to be a vegan recipe) turns this into a great muffin recipe!

Great combination of flavors! But I think next time I'm going to make it with a bechamel base, so it's more of a chowder and less of a milky soup.
