I've tried recipe after recipe for macaroni and cheese--one pot, baked, southern custardy style, all of them, trying to find that elusive "best" macaroni and cheese, and this simple recipe is the best of all. The only tweak I made, to get the best of both worlds, was to make it in two layers with cheese in between the layers and more cheese on the top for that "crusty" effect. Then I bake it till bubbly and hot. Simple is just the way to go sometimes,
