  • Drain lychee while reserving syrup, cut lychee in halves.

  • Soak goji berries in hot water for at least 5 minutes until softened. Drain.

  • Bring water to boil, add agar-agar and stirring occacionally, bring to boil again until all agar-agar has dissolved.

  • Add rock sugar and cook until dissolved.

  • Remove from heat, add reserved lychee syrup.

  • Pour into ring mold and add lychee and goji berries.

  • Refrigerate until firm (at least 3 hours).

  • Cut into wedges to serve.
