Broccoli Cheddar Soup

This was very good soup. I've honestly had better at one of my favorite restaurants, but this came pretty close. I changed a few things. First, I used half of the Velveeta the recipe originally called for and substituted the rest with shredded cheddar cheese. Secondly, I followed the suggestion of another reviewer and added a clove of garlic to the onions, which I think greatly improved the flavor. The last change I made, I hope nobody else does: I used vanilla flavored rice milk in the recipe, thinking the vanilla would not affect the taste. Unfortunately, it came through. You can use rice milk but make sure it is not flavored. It didn't ruin the soup but it would have been better without it. If you love broccoli cheese soup, do try this recipe! It may take some tweaking depending on your personal preferences but you won't be disappointed.

Easy Chicken Enchiladas

I love traditional enchiladas, but decided to try this recipe because it was quick and easy and others seemed to like it. It was quick and easy to prepare but not to my liking. The cream cheese and salsa combination doesn't work for me. I tried pepping up the chicken with some taco seasoning but all the same, I was disappointed with this.

I'm always on the lookout for low-fat, high fiber recipes so I was excited to try out this soup. I was not disappointed! I made a couple changes. I omitted the bacon - I am watching my cholesterol so decided to skip the fried meat. I couldn't find cranberry beans anywhere, even after making a trip to a health food store and searching high and low. I substituted for those with an extra can of white beans. In sum, the soup was delicious and I will be making it again.

Russian Tea Cakes

THE BEST!!! I made a batch and gave them away as Christmas gifts, following the recipe precisely. They turned out wonderful! I needed more for a holiday gathering but stupidly substituted margarine thinking it couldn't make too much of a difference...they were so different. USE BUTTER! But you all probably knew that already :)

Almost Stuffed Peppers

My mom made a recipe like this when I was growing up, except she used diced zucchini instead of green peppers. This was very good! And you can use regular rice if you don't have instant - just simmer for 20 extra minutes or until the rice is done. I love this with parmesean cheese sprinkled on top.

Sicilian Sausage Soup

I'm sorry, I didn't care for this soup. My guy and I both agreed it was too tomatoey. I followed the recipe exactly. I served it as leftovers after the first night and we ended up tossing the rest.

World's Best Lasagna

Wow! This is GREAT lasagna! The leftovers tasted even better...next time I make this I will refrigerate it overnight before baking. I had a friend ask me for the recipe, too! Sometimes I just make the sauce to serve over spaghetti.

Delicious Ham and Potato Soup

AMAZING soup! I just have one thing to add - do not use soy/rice/etc milk. The consistency is not the same. I made it the first time using skim milk and it was wonderful...I made it the second time using soy milk and it didn't work out as well. It was watery and the butter/flour mixture didn't mix with it very well, which changed the flavor and consistency. Just thought I'd share so others can avoid the same mistake!

Mine was on the sticky side - I will add a little more flour next time. If you like thin crust then this is probably not the recipe for you - I happen to like thick, chewy crust and was happy with this recipe. It reminded me a little bit of DiGiornio's pizza.
