I love this recipe. To avoid sogginess and still get a heaping serving of that wonderful vegetable medley, I simply spread the veggies out over the pan as well as on top of the fish. The juices are excellent over rice.

The frosting is too much but otherwise... where did all of the brownies go?!

Boudreaux's Zydeco Stomp Gumbo

We live in an ethnic neighborhood, so Cajun seasoning is hard to come by. However, we had the right ingredients for the "Cajun Seasoning in a Jar" which was a beautiful blend of flavors for this gumbo. The gumbo thickened well, had the right amount of vegetables and meat, and if you don't mind the chopping, fun to cook.

The taste is good but I'm not sure how to keep the catfish moist on the inside but crispy on the outside. The marinade works well keeping the fish moist but too far from crispy.

Great. I even put a little chicken broth in the bottom of the pan to steam and add a little more flavor.
