Beth B.

I'm a transplanted Buckeye fan, living in the middle of Packer country. I'm getting back into cooking, after taking a few years off during college. Two of the things that I want to learn to make are pie crusts and bread bowls.
Maple-Drizzled Apple Muffins

I made these to use up some apples, and my husband loved them! I got 18 muffins out of the batch - maybe because I went heavy on the apples? I don't think the glaze has a strong enough maple taste - maybe I'll use more syrup next time. Overall, they're pretty tasty.

Peach Berry Cobbler

This tasted SO good - I made 1/2 a batch, and my husband and I polished it off in one sitting! YUM! His only suggestion was that it could use more fruit/sauce - but I think I'll just add more peaches and blueberries next time.

Garlic Penne Pasta

Thought it tasted good; my husband thought it was a little dry though. It was super easy to throw together, and we liked the flavor.

Easy Bake Fish

I didn't have salmon, so I used perch instead. I thought the flavor was a little much, and my husband (who's not a mustard fan) didn't like it at all. Plus, it made way too much sauce for the fish (maybe my fault since perch is smaller than salmon), so I thought it was soggy. Probably not going to try this one again.

Lime-Thyme Potato Wedges

I thought they were super easy, and I liked the taste of them. I may kick things up with more spices - garlic, cayenne pepper - next time.

Sloppy Joes

My husband requested sloppy joes the other night, and so I thought I'd try making them from scratch. I took the advice of some of the reviewers and did part BBQ sauce/part ketchup and I went heavy on the onions and garlic. I thought it tasted just like sloppy joes are supposed to, and he loved it - "it's a keeper!" were his words. :)

Pork Chops for the Slow Cooker

I was looking for a quick, slow cooker recipe for pork chops. I liked that I had everything on hand for this recipe. I thought it was pretty tasty, although nothing super exceptional. I may make it again - I like the fact that it wasn't a cream soup base.

Teriyaki Potatoes

I've been making these potatoes for ages; they're quick, easy and INCREDIBLY tasty. In fact, they're one of my husband's favorites - and that's saying something, since he's not into spices all that much. An aside: I quit measuring the spices after the first time making it - and I've always used soy sauce instead of Teriyaki (personal pref). It always turns out great though!

Maple Salmon

I was looking for a new salmon recipe, and I found a winner! My husband loved it - especially the maple syrup part! I'll make it again.

Cream Cheese Coffee Cake

It was OK... I thought the batter didn't have much flavor after baking (although, it tasted great beforehand). I liked the filling though. It needs "lots of glaze," according to my husband. I don't think I'll make it again - I'll make something with more of a fruit filling next time.

Good Burger

I wasn't impressed with this one - it was much too sweet for me! My husband thought it tasted "fine" though. If I try this again (big if), I'll use much less sugar.

Marbled Tarts

These were pretty tasty. I used regular-sized muffin tins, since I don't have the mini ones, and I got 11 out of the recipe. I liked their flavor, and even my husband (who doesn't like cheesecake, sour cream or cream cheese) enjoyed them!
