Loved this so much I made it again. I add a sprinkle of Italian seasoning at the end. It goes well with meatballs or crab legs as a side. Can also add Prosciutto and have it as a main dish.

Very good. We really liked it. I added a few sprinkles of cayenne pepper, probably 1/8 tsp.

Cheese Tortellini Soup and Sausage

This was easy and really delicious. I used ground sausage and Italian seasoning from Viviano's in St. Louis. Next time, I will add kale or chard. Served with salad and garlic breadsticks. It was gone before I remembered to take a picture.

Caldo Verde (Portuguese Green Soup)

Delicious! I didn't have any sausage, but we had leftover ham and bacon. I used well over 6 oz, though. Probably more like 16. I used 1 qt chicken stock and 1 qt water. I also used cayenne pepper instead of black pepper. Excellent with a little Don Simon sangria.

Loved this. We had it for dinner and served with baked beans. I didn't have onion, but 1 clove of garlic worked nicely. I also added. some kale to make it healthy.

We did the lemon juice/whole milk substitute, and I added 1tsp salt. We used a pack of 14 drumsticks, and we could have reduced the breadcrumbs to 1 1/2 cups. A little hot sauce in the buttermilk is a must. This made 2 batches in our air fryer, at 20 minutes each.

Balsamic Bruschetta

This was easy and tasted great! We had lots of extra tomatoes and this was a great way to use them. I didn't have fresh basil, but using 1/2 as much dry was fine.

Parmesan-Crusted Shrimp Scampi with Pasta

We are keeping this with a few tweaks. 12 oz angel hair pasta is what we'll use. I also substituted chicken broth for 1/2 of the butter. Needed a bit of salt. It is easy and delicious. We like it!

Liver and Onions

I loved this! The secret is definitely adding a little sugar to the onions and soaking in milk. I made a few changes too: We prefer the onions sliced. I also dredged the liver through a beaten egg before breading. Breading was 1/4 cup Italian Breadcrumbs + 1/4 cup flour + 1/2 tsp salt + 1/2 tsp pepper.
