A favorite bread machine recipe! I added 2 Tbsp. potato flour for better texture & better keeping qualities (purchase at King Arthur Flour in VT). I also added 2 Tbsp. wheat germ for extra nutritional quality.

Quinoa and Black Beans

DELICIOUS either hot or cold. Changes I made: 1 tsp. olive oil instead of veg. oil. I substituted 1 c. bulgur grain which I poured 1c. boiling water over & let sit until water was absorbed. I used 1 1/2c. chicken broth in place of veg. broth and also added 1 chopped red pepper for color. One can of black bean was plenty. I did not have cilantro so I used fresh parsley. When served warm, I put shredded cheese over top and put in microwave to melt the cheese.

Molasses Bran Muffins

Delicious muffins like my grandmother used to make. I made a few changes as suggested by other reviewers; I used only 1/4 c. molasses, and added 2 Tb. honey & 2 Tb. brown sugar. Also added 1 tsp. vanilla and 1 tsp. cinnamon. I used bran buds instead of bran flakes.

Spiced Butternut Squash Muffins

I made the following substitutions: 1/3 cup brown sugar instead of 1/2 c. white sugar. Measured 1 cup cooked butternut squash and baked in mini cupcake tin (baked only about 20 minutes). Turned out great.
