I skipped the cinnamon and doubled the rest of the spices. I served mine in a flour tortilla with cotija, cilantro, slow cooker pintos, and a squeeze of lime. It was delicious.
I did not make any substitutions. The flavor was good but was definitely missing something. I thought it was a little on the bland side.
The first time I made this exactly to recipe and it was great. I’ve made it multiple times since and like to throw in more or less or different veggies that I need to use before they spoil. The recipe is quite flexible. I also like to cook it a little longer and reduce the liquid more. Can anyone tell me whether it is necessary to heat the spices separately on the stove first? I’d prefer to throw it all in the crockpot without that extra step.
I wanted to love this. And I did love making the entire head of cauliflower and the presentation. I found the flavor a bit bland. The spice to cauliflower ratio was too low in my opinion.
