Chili Lime Vinaigrette Dressing

Rating: 4.5 stars 14
I got this recipe from a lady who always serves it with a grilled salmon and leafy greens salad, using feta crumbles, red onions, and carrots. If you don't want it as spicy, you can cut back on the red pepper flakes but we love it just the way it is.

Chicken Noodle Salad

Rating: 4.5 stars 16
Get ready to make all sorts of friends when you bring a big bowl of this Asian chicken noodle salad to the next big cookout. The only folks you might scare away are the ones who brought regular pasta salads. There's just something delightfully addictive about this special combination of cold and spicy. This recipe is the perfect catchall for all those summer vegetables we're supposed to be eating more of, as well as any dry leftover chicken you have around.

Quinoa Tabbouleh

Rating: 4.5 stars 975
This tabouli recipe is different. Instead of using bulgur like traditional tabouli, this recipe uses quinoa. It is a grain that is available at health food stores. It looks and tastes better than bulgur. My husband and I both love this and neither of us is vegetarian. It's a great meal for a hot summer day. The longer it sits the better it tastes.

Mediterranean Couscous Salad

Rating: 4 stars 10
This delicious salad will delight the whole family.

Mediterranean Zucchini and Chickpea Salad

Rating: 5 stars 154
Chopped zucchini, chickpeas, tomatoes, and fresh basil in a light balsamic dressing. Or you can use red wine vinegar! Makes a great side dish or light lunch. Not necessary, but best if chilled at least a couple hours to let flavors blend.

Kale and Feta Salad

Rating: 4.5 stars 153
I've been making variations of this kale feta salad for years. I recently learned how to massage the kale, which makes a huge difference. I had a friend ask for my recipe, and I realized I didn't have one. This is my first attempt at writing a recipe, so please let me know how it works out! I like changing the ingredients: sometimes a pear instead of an apple, cranberries instead of currants, Parmesan instead of feta, etc. Great as a side dish or by itself the next day for lunch!
