I used small eggplants and chose not to peel them. Used real tomatoes and seasoned canned tomatoes instead of Prego. We loved it!
Made 8 cups with 5 cubes chicken stock. Added cubes potatoes (precooked), roasted chicken breasts with skin, pepper, cubed carrots, sliced celery, and sliced green onions. Used thin egg noodles, so they do not need to be precooked. No need to add additional salt. Delicious!
Great flavor. Used yellow lentils, so it turned into more of a stew than a casserole. Substitutes tomato sauce for chopped tomatoes, which worked well.

Delicious! I made a half batch to create a small Coronavirus-cake to celebrate my husband’s birthday. There are only 2 of us to enjoy it during quarantine, and I am happy to report that the cake is still moist 3 days after making it. I will absolutely make this again!
Delicious! I have made this twice. I used sliced stale sourdough bread as the base, which was nice and chewy.
I used a crock pot for this, so I had to reduce the liquids to make it all fit. Only added 7 cups of water and no broth. Otherwise I followed the recipe and it was delicious! The left overs the next day were even better.
