The first time I made this casserole was about 10 years ago when my children were little. Even with all the vegetables in it, they LOVED it. This recipe is a favorite request for their birthday meal!

  • Preheat oven to 350 degrees. Prepare 2 quart casserole dish by spraying with Pam.

  • Brown ground beef and ground turkey with onion and green pepper. Salt and pepper to taste.

  • Layer ingredients in casserole dish as follows: potatoes (salt and pepper), carrots (salt and pepper), rice, frozen peas (salt and pepper), ground beef/turkey mixture. Blend soup with water and pour over casserole.

  • Bake covered at 350 for 60 minutes or until potatoes and carrots are cooked. Length of time depends on how thinly you sliced the vegetables. Remove from oven, top with the cheese and return to oven an additional 5 minutes. Enjoy.
