No Sugar Oatmeal Cookies

My partner and I are observing lent that prohibits consumption of dairy and eggs. I was looking for some vegan cookie recipes and was very glad to find this one that listed ingredients that I always have on hand. Thanks to helpful suggestions, made this recipe twice already. The first time I made these with small addition of 1/4 cup brown sugar and used 1 1/2 cups of oats and 1/2 cup of flax seeds, and I kept them in the oven for 10 extra minutes. The cookies were good, soft on the inside, a bit chewy, but since my partner likes his cookies sweeter, I added 1/3 cup of maple syrup the second time and substituted almond milk with orange juice. They came out much tastier with enough sweetness and same soft consistency. Half a batch is already gone. My daughter was helping me make the cookies and she also loved the flavor. Thanks to the author and all reviewer suggestions, will definitely make them again, want to try with chunky peanut butter....

Good recipe and suggestions. I replaced water with soy milk and next time will try almond milk. I tasted too much of baking powder even though I used the amount from the recipe. My husband and I devoured them. Will definitely make these again, perfect recipe for lent.

Strawberry Orange Banana Smoothie

So delicious, had to make 2 batches because my kids drank it all. I didn't make much of a change. I didn't have ice cubes, so used a cup of frozen strawberries instead, no ice cubes needed. I also used 1 cup of orange juice, threw in one peeled orange and put a couple of spoons of flax seeds to make the smoothie a little more filling. Very, very delicious, will definitely make again and again.

Chickpea Soup I

I made this soup today for my family and it was a big hit. Like always I read some reviews made very slight adjustments to our taste. I used 2 cartons of stock (vegetable and chicken), instead of a fresh tomato used a can of diced tomatoes, and used 2 cans of beans. Also, didn't have all the spices that the recipe asked for so added a little Italian seasoning, dry basil and smoked paprika. I loved the soup and will definitely make it again.

Flatlander Chili

I made it and my family loved it, had seconds and barely any leftovers. I took a suggestion to add 1 large can of tomato sauce and 1 can of crushed tomatoes instead of tomato juice and added some corn meal to thicken the sauce. I had to cut down on spiciness because my kids cannot handle that much. Also, I made the chilli in a Dutch Oven, I'm sure it doesn't affect the taste. Loved this recipe, big thanks to the creator and all suggestions from reviewers.

Baked Split Chicken Breast

My first time baking a split chicken breast and this recipe did not disappoint. Quick, easy and tasty. I used dried basil and some Italian spices mix, the rest of the recipe kept as is. Baked for about 55 minutes, maybe an hour. My family loved it!

Spicy Shrimp in Cream Sauce

Delicious flavor even without habanero. I had a mix of different peppers in a jar, added just a teaspoon, but so much flavor. I need to learn how to thicken the sauce, but even as runny as it was we ate it all with pasta.

Chicken Parmesan

Just made the dish and my whole family loved it!!! My chicken was a bit thicker and I fried it a little longer. Baked for 20 minutes and got a perfect dish! Used fresh basil, I think it adds extra special flavor. This recipe is saved and will definitely make again!

Lemon Cream Cheese Frosting

Just made this frosting to cover my lemon bundt cake, turned out delicious and fluffy. I took suggestions of other reviewers, used 3 tbsp of lemon juice and about 2 cups of sugar. Perfect tang, a lot of lemon flavor, delicious.

Oven Baked Sweet Potato Fries

My first time making sweet potatoes and it was a success. Easy, fast, delicious. Crunchy on the outside, sweet on the inside. Don't forget to turn fries at least once to get crust. Will make again.

Chef John's Italian Meatballs

Great, simple, delicious recipe! I had a 1.4 lb. package of meatballs mix, followed the recipe with no change and the result was juicy, tender, perfectly seasoned, flavorful meatballs!!! I baked them for about 16 minutes. My kids asked for seconds. I will never look for another meatball recipe!

Like always, I read all reviews and suggestions first and adjusted the recipe to what I have in my pantry and fridge. So, instead of 1 cup of oil I used 1/2 cup each of oil and apple sauce. Instead of water I used 1 cup of coconut/almond milk. Also added 2 spoons of instant coffee to dry ingredients because I like strong chocolate flavor, and added chopped walnuts. I am not a professional in baking and it was my first time making any type of brownies, but it came out so, so delicious: cakey, gooey, soft. I just made the brownies and having a very hard keeping my family away from them, they keep picking at them. Thank you all!
