Scald milk and set aside to cool. In mixer bowl add flour, yeast and salt. Mix with dough hook. In separate bowl, mix together scalded milk, honey, melted butter, and beaten egg. Temperature of the mixture must not be hotter than 130 degrees. With mixer running, add milk mixture until well combined and forms a dough ball that cleans the bowl (may require more flour if necessary). knead with mixer for 8 min. Remove dough, add 1 t olive oil to bowl. Return dough to bowl, cover well with oil and cover bowl with plastic wrap. Put in warm place to rise. Punch down dough after it doubles in bulk, and let rest covered for 10 min. Grease cookie 2 sheets. Roll dough out flat to 1" thick on floured surface. Cut with pizza cutter into 2"x 2" squares. Re-knead and re-roll scraps until all dough is cut into squares. Place dough squares on cookie sheet, and let them rise in warm place for 40 min. Bake for 12-15 min at 350 degrees. When rolls are done, brush with butter and serve with cinnamon honey butter.
