I used a boneless, lean pork loin, about 2.5 pounds. I substituted Apple Cider Vinegar for the vinegar. This turned out so good, it's going to be in our regular rotation.
I used canned Bush's Black Bean Fiesta and Cheddar cheese for my filling.
Very good (though I expected it to taste sweet like a sweet potato). I microwaved the butternut squash 30 seconds to soften the rind before removing it with a vegetable peeler. Also, I used Lowry's Seasoned Salt. I cooked it in my toaster oven to avoid the heat of the standard oven. I will definitely make this again.
I made this without the cornbread. The chili was delicious. I think cinnamon is an underrated secret ingredient! my favorite cornbread is Krusteaz mix which I prepared on the side
I used boneless pork chops and coleslaw mix. It turned out fine.
Made a half recipe and filled 18 shells in my white 10x8 casserole pan. added 1/2 c. chopped fresh spinach to the filling and omitted mushrooms. yummy!
