Amy

i'm married to a wonderful man and we have a beautiful 3 year old daughter and a son on the way. we also have a 7 year old rotweiller who is like a 2nd daughter. when i get free time, which is rare, i like to crank the tunes and spend some time in the kitchen preparing wholesome meals and snacks (and some not so wholesome but still yummy!). My daughter and I love to spend time together baking in the kitchen, she's turning into quite the pro! i like to experiment with new recipes. Aside from cooking my interests include music, photography, outdoor activities (camping, hiking, etc...) and art (tattoos).

i thought it was pretty bland. we added some mayo to the leftovers and it tasted a little better... not sure if i'll be making it again

Rainbow Veggie Chili

the chili was good but not very spicy... i added extra chili powder and 1/2 cup medium salsa as well as some sliced mushrooms and carrots. it was great with cheese on top and cornbread on the side. next time i'll use hot salsa and more spices. also instead of boiling and simmering one hour i cooked it on low heat for about 5 hours and the flavors really popped!

this was a very good meal that was very quick and easy. i added 1/4 cup milk and 1/3 cup mayo and only used 6 slices of cheese and the sauce was perfect. we didn't have peas so i used canned mushrooms instead.

the cookies are good but pretty dry. you need a glass of milk if you're going to eat even one.

Hash Brown Egg Bake

this was a pretty good dish. i added chopped tomatoe, onions and mushrooms for some extra flavor and used boca veggie sausage in place of the regular sausage. it could have used more cheese and i will add more next time i make it. to cut down on dishes and clean up time i used the same bowl to mix the eggs/milk as i used to mix the potatoes/veggies.

Cake Balls

these are super yummy (very sweet!) but pretty hard to make. i used both vanilla and chocolate frosting with strawberry and red velvet cake. i also used both vanilla and chocolate confectioners coating. baking the cake is easy but make sure to flour the utensil you're using to scoop the balls, it makes it a whole lot easier... thankfully it didn't take me too long to figure that one out. i refridgerated the balls like other reviewers had suggested and they were still pretty hard to dip in the chocolate. they look pretty hideous but taste delicious! maybe i'll try to make them smaller next time? and use a different coating. i'm not sure but i'm only making these on special occasions they took a lot of time!

very very very good! i added a green pepper and a handful of mushrooms i had left over and needed to use up. this salsa tastes great and has just the right spice but it's just a little too watery.
