Fun Size Frittatas
These are perfect for lunch boxes! Kids love the size, and parents love the nutrition. Pack these little frittatas with potato sticks, bread and jam, and fruit. There you have a fun spin on breakfast for lunch! If your kids don't like veggies, just have the meat and cheese. Everything, including spices and type of cheese, is customizable.
Hot Reuben Delights
These sandwhiches make an easy and cheap dinner. Serve with chips and a salad for a weeknight meal with a Russian flare.
Not-So-Chunky-Monkey Shakes
This sinfully delicious, but remarkably healthy shake can be made for breakfast, a snack, or desert. I use Edy's non-fat chocolate frozen yogurt. It has a great texture and flavor! The frozen banana adds great thickness, and lots of vitamins. Yummy!

Lemon-Ginger Frozen Yogurt with Blueberry Sauce
This meal is refreshing with the fresh lemon in the yogurt and sauce. The ginger adds a sweet kick, and the blueberry brings it all together. Fantastic for a summer desert!
Sweet and Salty Honey Toast
This is an absolutely delicious breakfast treat with a cup of coffee. Easy and elegant- what more could you ask for? I know, I know; salt on toast sounds awful. BUT it really brings out the sweetness of the honey and butter. It's best to use fresh cracked sea salt for optimum flavor. Enjoy!
Whole Grain Breakfast "Candy Bar"
This breakfast treat was based on the composition of a Take 5 candy bar. Lucky for me, this one is made with whole grain rice cakes, protein rich peanuts, and only a smidge of chocolate! Sweet and salty, and divinely easy! If you don't have any chocolate covered pretzels, chopped regular or whole grain pretzels and a small amount of mini chocolate chips works wonders! Have with a tall glass of skim milk.
Peanutty Chicken Ramen Bowl
This dish is easy, economically friendly, and a great way to use up leftover chicken. If you don't have peanut sauce, a tablespoon of peanut butter with about 1/2 tsp vineager, some ground ginger and pepper will do.

Lycopene Muffin Tops
I once suggested tomato soup cookies, and my mom challenged me to create them. Instead, I came up with these muffin tops, which have a deep and spicy flavor. Plus, they are low in fat and high in lycopene!

Abbey's White Chocolate Latte
I created this recipe for my little sister, Abbey, who's a latte fanatic. She was blown away, and drained it to the last drop! This makes one VERY large, indulgent latte, and could probably serve two. Ejoy!
Light Citrus Frosting
This frosting is intended to go with "Chocolate Citrus Cupcakes". It, too, is amazingly healthy!
Iced Green Tea
This light, slightly tart, citrus-flavored tea is perfect for summer sipping!
