This recipe was wonderful! I used boneless, skinless chicken thighs because that is what I happened to have thawed. I used yellow sweet curry powder, Garam Masala, and Penzey's Curry "The Now Curry". I also used petite diced tomatoes, again...it was only because it was what I had. So good!

OMG! This was fantastic. For the most part I followed the recipe to the letter of the law. Except I altered the sugar and salt as per everyone else's comment. Only to find I had to go back and add them. I think this recipe (as is most recipes) is a matter of personal taste. So taste the sauce as you are cooking it. Is it missing something? Add a little of whatever it is until it is prefect for you. But this is an AWESOME recipe! YUM!
