I haven't seen a recipe combining avocados with cream cheese and sour cream, so I made one! Came up with this creamy blend of cream cheese, sour cream, and avocado seasoned with ranch dressing mix, hot sauce, etc. Excellent with tortilla chips. Add more hot sauce, if you like (I don't add lemon juice because the sour cream already gives it tartness). We couldn't stop eating it!

Authentic Chile con Queso
This is a true chile con queso that can be eaten with tostadas or in a warm corn tortilla. This is not like the Americanized version of chili con queso that we have become used to that is a cheese dip, which I also love. This is the way my grandma used to make it. The great thing about this recipe is you can play with it and adjust it to your personal taste. If you like it cheesier add more cheese. You can't mess this up unless you burn it.

This quick and easy salsa can be made in just a few minutes with a food processor. Green onions instead of white onions give it a nice, mellow flavor to balance the kick of the jalapenos. This recipe also works well with 2-3 habanero peppers instead of the jalapenos. But be sure to remove the seeds and membrane from the habaneros first! I like to take the lime after it's been juiced and rub down the bowl I will be serving the salsa in. I also rub the lime on the plastic wrap this will help keep the avocados from turning brown. Don't forget the tortilla chips!
