I followed the recipe with a few exceptions. I didn't have the Chinese wine so I used Mirin (sweeten Japanese sake) about a tbsp. and used a tbsp. of oyster sauce and this dish was to my liking. I used leftover chicken as well. This would make a good rice bowl but just on its own it was really good. I do not recommend using rice wine vinegar or any type of vinegar as it changes the taste of this dish ( unless this is the way you prefer it. ) If you do not have mirin, but have sake you can add a bit of sugar to it.
