Chairman James

I'm on my third career, now working in graphic arts. I used to live in Chicago and learned to enjoy more ethnic food, to appreciate better vegetables and the joys of wok cooking and rice. I am an eccentric bachelor and would like to see more recipes for those with roommates rather than children (although they are very similar).

I was surprised that this dish went over as well as it did. This would be a good basic idea for leftovers. You could use almost any combination of vegetables and meat, heat 'em up and put over rice and have a decent, quick meal. If I do this again, I'll stir fry the whole thing in the wok with some soy sauce without any additional salt.

Dijon-Tarragon Cream Chicken

Very good. Worked just fine with dried tarragon (just add a little more). Sauce thickened nicely, would not have minded a little more to spoon over veggies on the side. This is really a 4-1/2 star recipe, maybe even 4-3/4.

Spaghetti with Garlic and Basil

A classic dish. But it needs to be paired with something green and some more protein to be a well-rounded meal.

Debdoozie's Blue Ribbon Chili

A good basic recipe with plenty of room for one's personal adjustments to taste. I picked this out because I hadn't made chili in a long time and wasn't sure I knew how anymore. This gave me an excellent starting point with which I could then add to it to make it my own.

Egg and Sausage Casserole

Pretty good. Certainly easy and quick. Could have used more eggs, less cheese and oregano. Also would have benefitted from some sauteed onions and maybe a touch of milk. I thought the top browned too quickly, but that could have been my oven. Overall, pretty good but not the best.

Round Steak and Gravy II

It is easy and the taste is pretty good, but the gravy was thin and too much. Some pieces of meat at top dried out a bit. Needs work.

Chicken Scampi II

Pretty good. Would have liked a little more sauce to put over the pasta.

Iowa Pork Steak

I modified this after a first try making it according to directions. While both turned out pretty good, my modification included sauteeing the onion first then doing the whole thing on the stove top. I think that worked better.

Very filling and rich. I used penne because I couldn't find ziti. Also I messed up the layering order. But it still came out fine.

Busy Day Chicken Rice Casserole

A little salty for my taste, but not bad. It's certainly quick and easy. I used Cream of Broccoli soup, which worked very well with a side dish of california blend vegetables. This could easily be adapted for any meat.

Roasted Pork Loin

Of all the recipes I've rated here, this is the first one I've given 5 stars to. It's easy, relatively quick (you can go do other things while it's roasting) and comes out delicious. My leftovers were gone by the next morning. I left out the wine, but plain water worked just fine. I added some chopped onions and mushrooms to the roast's casserole dish then reduced the liquid in the pan while the roast rested, then added a little corn starch/water mixture to thicken. Very good.
