I took off the silk of the corn and submerged the corn (with the shuck still on) in water for a couple of hours. I then pulled back the shuck just enough to brush on some melted butter with seasoned salt. I put the shuck back over the corn and covered it tightly with foil( shiny side facing in) I put it on the pit for 40 to 45 min. turning every 5 min. and it turned out very tender. Everyone loved it.
I used to just guess on how much butter or milk to use with the potatoes but these turned out perfect. Thanks Jon
I have to agree with some that said the filling was okay,it did seem to lack the kick that I was expecting it to have. I think next time I will add a can of rotel to it.

I cut down just a tad on the butter and sour cream and it was still delicious. It's also very important to defrost the potatoes so they don't take longer than the recommended time to cook. This recipe is definitely a keeper. Thanks

Being from Texas I've tried many recipes for King Ranch chicken casserole but this is by far the best my family and I have ever tasted. I did saute the pepper and onion before adding them to the cassserole so they wouldn't be hard. I also dipped the tortillas in the chicken broth and only used 1 can of chicken broth to the casserole and it came out PERFECT. The family is already asking when I will make this again.
made this dish last night and the family loved it. I added more cheese than called for and served this with tortilla chips. I also added some chili powder about 1tsp. just to give it a little kick. Thanks for the recipe.

Great recipe!! I added an extra pouch of taco seasoning and some comino and garlic powder for some extra spice. Served with tortilla chips. This is a keeper.
