South of the Border Coleslaw

In a large bowl, combine all ingredients except dressing. Add half of the dressing to the coleslaw, then mix again. Add remaining dressing in increments until at desired consistency.

Can be eaten immediately, but flavors will meld more completely if placed in a sealed container overnight in the refrigerator.

Serve with flavored tortilla chips (guacamole chips, red or blue corn tortilla chips, etc.) as "scoops" for the coleslaw.

NOTE: This slaw has a spicy kick, which becomes more apparent over time. Only add additional peppers after the flavors have had time to combine in the refrigerator.
