easy slow cooker mexican chicken soup

"I always keep certain canned goods on hand to whip up standards. You can cook chicken thighs ahead of time and add to soup, or you can put boneless cuts of chicken in at the beginning of the cooking time. Slightly spicy, it's a terrific 'comfort' food!"

Michelle's Vegetable Frittata

This Frittata can be eaten hot or cold. This is my go-to recipe when my son needs to grab a quick breakfast before work. I make it one day, and he can enjoy it every morning thereafter.

Michelle's Mango Peach Salsa

This wonderful salsa in tasty on grilled chicken, fish or just with tortilla chips. It's very refreshing and you won't be able to stop eating it. It tastes even better the second day. It's a beautiful salsa, but unfortunately the photo function doesn't work on this site currently. You'll just have to take my word for it!

Michelle's Tamale Dip

Stick everything in a slow cooker for a few hours and you'll have a warm, melty yummy dip for chips.

Michelle's Slow Cooker Swiss Steak

The cube steak is so tender after cooking in the crock pot all day. My son is a big gravy fan, so I always ensure that I use extra ingredients so that he has enough. Unfortunately, this site currently doesn't allow adding pictures, because the finished product looked yummy!

Slow Cooker Chicken Fettuccini Faux-Fredo

This is a rich, flavorful sauce for putting over Fettuccini noodles. Everything goes in the slow cooker, cooks all day and makes the house smell delicious. My son likes a ton of sauce over his noodles, so this fills the bill. My husband, who doesn't say much about anything that I cook, said "this is a keeper!"

coconut french toast with tropical fruit

"Prepare this the day before you plan to eat it, let it set up in the fridge overnight and you have a tasty breakfast treat!"
