Fresh Tomato Zucchini Soup
At a point of abundance with tomatoes and zucchini from my garden I came up with this soup. A friend said it was like a soup you would get at one of those chic 5 star restaurants! Serve with crusty French bread and salad. This soup tastes wonderful after a little cooking or simmering a long time. Sometimes I add cooked rice to give a bit more substance.
I picked up this recipe from Germany, it is very simple and tasty. For a different taste, omit the gherkins and add 1/4 cup of chopped ham. The basic recipe is also delicious with boiled new potatoes instead of pasta.
Tomato Cucumber Onion Salad
Many say this is a great summer dish, but I find that I crave it ALL YEAR ROUND! Very addicting, goes with everything, very fast and easy, and always impresses with its amazing flavor!
