1/3 lb. Italian sausage
3 eggs
1/8 tsp salt
1/8 tsp pepper
1 pkg. (8 ½) corn bread/muffin mix
¾ C shredded cheese, divided

Directions

Instructions Checklist

Step 1
Scramble eggs with seasoning. Add cooked sausage and ½ C cheese.

Prepare muffin mix according to package directions. Add to egg mixture.
Step 3
Pour into paper-lined muffin tins. (about 2/3 full)
Step 4
Bake @ 400 F for 10 minutes.
Step 5
Sprinkle with remaining cheese.
Step 6
Bake 5 more minutes.
Step 7
Cool 5 minutes and remove from pan.
