You can make this homemade demi-glace from a pure veal stock reduction.

Chef John's Homemade Mayonnaise

Rating: 3.5 stars 108
Homemade mayo is one of those indescribable culinary pleasures. If you have a stick-style or regular blender you can make your own mayo! It's so much cheaper and way more delicious. You also get to decide what kind of oil you want: a nice fruity olive oil; a lighter vegetable oil; or your own secret custom mix.

Thai-Style Peanut Sauce with Honey

Rating: 4.5 stars 397
Most peanut sauce is does not have enough peanut for me, thus this creation. It isn't often friends will eat a sauce with a spoon, but there is never any of this left over.

How to Make Peanut Dipping Sauce

Rating: 5 stars 54
This is one of those recipes you're going to have to taste and adjust to your palate. Consider this a template that you can tailor to your personal taste. It has a gorgeous, luxurious texture. It's fantastic on any grilled meat or vegetables or as a dipping sauce for spring rolls.

Chef John's Beurre Blanc

Rating: 5 stars 45
This creamy, tangy French sauce is excellent served with seafood or eggs.

Poutine Gravy

Rating: 4.5 stars 15
As the old joke goes, it takes a lot of time and effort to make poutine, but at least when you're finally done you get to eat soggy fries. And, what incredibly delicious, soggy fries they are. While I don't have any problem with you buying the cheese curds, or using frozen fries, I do hope you make the sauce from scratch. Use beef chuck, short rib, or brisket to achieve this marvelously meaty, super savory, ridiculously rich gravy that makes all the sogginess worth it.

Bourbon Pepper Pan Sauce

Rating: 5 stars 31
Mastering pan sauces is one of the most important but easiest steps towards producing legit restaurant-quality dishes at home. Assemble all the sauce ingredients before cooking the steak so you can make the sauce during the 5-minute resting time for steak. The rich, sweet, peppery flavor profile also works wonderfully with pork chops and grilled chicken. You can also switch up the bourbon for another liquor, since this really is just a technique recipe.

Sombrero Fajitas

Rating: 4 stars 27
Beef Skirts are rubbed with fajita seasoning and garlic powder then cooked in a blend of bacon, bell peppers, onions and cilantro and topped with Monterrey Jack cheese. Very easy family pleaser. Serve with warm tortillas and homemade Spanish rice and beans-a-la-charra.

Chef John's Cheater Demi-Glace

Rating: 5 stars 6
You can make a demi-glace using chicken wings and beef shanks since veal bones can be hard to come by. This alternative method works amazingly well and the demi-glace closely resembled the real thing in look, feel, and flavor.
