I have had so many compliments on this pie - it helps to use 2 or 3 different kinds of apples, they balance out tartness and sweetness. Its requested at all sorts of get-togethers now!

Salmon Avocado Salad

This salad is a great summer dish. Its a warm salad but not hot. I really enjoyed it. The only change I made was to leave out the cilantro and add some fresh snipped parsley. I forgot to add the feta at the end but it was still great.

Corn Casserole

This is a great recipe! I used frozen corn instead of canned and it worked fine. I added a teaspoon of chili pepper and a dash of some very hot red pepper flakes to give it a little more of a kick as well. The knife didn't come out clean but I let it sit about ten minutes and the consistency was fine. This one is a keeper!

Lasagna Spinach Roll-Ups

I thought this meal was outstanding! I left out the red peppers and used a ready-marinara sauce and it was still really good. I also used fresh spinach and wilted it at the end of cooking the mushrooms and onions. I am passing it along to friends.

Coconut Curry Pumpkin Soup

A great recipe for curry lovers! I didn't have coconut oil so I just used olive oil instead. I also used fresh pumpkin and 2 cups of coconut milk. I served in a bread bowl and it was great.

Sweetly Spiced Pork

Great recipe for a fall day. I only made two small changes; I omitted the salt and pepper and added them later and instead of apple juice I used apple spiced wine. This one is a keeper! Excellent leftovers as well if there is any left!

Fish Tacos

I loved this recipe! Instead of the herbs used here I used cilantro and cayenne and long hot peppers from the garden. I used red cabbage and they looked so pretty when served. A real keeper thanks for sharing!
