I made this because we have soo much squash from our garden and wanted something different. It is really good! I baked it in a 13x9 dish so it would not be thick. It came out great!
Great recipe! Made this for New Years and daughter and husband love it. I added a extra can of black eye peas that I drained and rinsed. I used 1 small lemon on the cut avocado. Since we do not like cilantro I substituted fresh parsley. Served with Scoops! Yummy!
