This recipe was given to me as part of a wedding gift recipe collection from a very dear friend. It is rich, aromatic, flavorful and makes A LOT. So please grab the biggest pot you can find. I mean REALLY BIG. Extra sauce freezes well for future pasta dishes.
Tantalizingly Tangy Meatloaf
Meatloaf with a sauce that will keep them coming back for more. The sauce contains pineapple preserves, brown sugar and ketchup. It glazes up real nice over the meatloaf. I've NEVER had leftovers even when I've tripled the recipe!
Chicken Wonton Tacos
Light and tasty, these make a great appetizer or a quick and easy main dish! Kids love them! Finally a dish that makes use of ground chicken but not so far-fetched. I bake the wonton wrappers to save time and it eliminates most of the fat. Although time-consuming, you can fry wrappers in sesame or olive oil for the extra flaky shells, folded in a triangle for about 1 minute on each side. I loved the ones at Applebee's® and decided to attempt a home version. I was extremely pleased with the healthier version! Top tacos with cilantro, red onion, or sweet onion, if desired. Serve lime wedges on the side.

Buffalo Meatballs
These are just as good, if not better than, Buffalo chicken wings but without the mess! You can use ground turkey in place of the ground chicken. Serve on toothpicks with celery sticks, hot sauce, and blue cheese dressing.

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo
I loved a local chain restaurant's fish tacos so much, that I had to try to duplicate them. They combine flour tortillas filled with breaded, fried tilapia, layered with chipotle mayo, topped with napa cabbage, dressed with honey-cumin sauce, and served with pico de gallo, sour cream, chips, and salsa. You'll find them very refreshing and packed full of flavor!
