I'm known for cooking many everyday meals in large quantities, as if cooking for an army or a big party! My explanation for this madness is as follows: most dishes can be divided up, then frozen or refrigerated to be served as leftovers later, so waste is really not an issue; and great food is always just minutes away thanks to the oven or microwave. Plus, it takes close to the same amount of prep and effort to make a large portion as it does a small one when initially cooking a dish. Not to mention the fact that I have always been a huge fan of leftovers!
