This goes into the cooker quickly, with no precooking and chicken straight from the freezer! I like to put it in before we leave for church so I can come home to a nice meal.

  • 1. Soak 1 cup quinoa in enough hot water to cover for 5 minutes while assembling seasonings.

  • 2. In a small dish, mix together 1 1/2 tsp salt, 3 TBSP nutritional yeast flakes, 1 tsp onion powder, 1/4 tsp dill weed, 1/8 tsp turmeric and 1 TBSP chives.

  • 3. Drain quinoa and place in slow cooker and stir in 1 3/4 cup water, 1 tsp vinegar, and seasoning mix. Dot with 1 TBSP butter.

  • 4. Place 3 large or 4 small frozen chicken breasts on top of quinoa, season lightly with salt.

  • 5. Stir together 1 TBSP honey with 3 TBSP spicy brown mustard. Spread over just the chicken breasts.

  • 6. Cook on high for 3 hours. Serve with a green salad and some steamed veggies.

Tips

Nutritional yeast flakes are a seasoning and not like bread yeast. They can be purchased at a health food store or online. If you cannot find them they can be omitted. Do not substitute any other yeast!
