Carrot Salad Sandwiches

This is by far my kid's favorite lunch (some prefer it without the celery) Someone requests it for our menu every week!

  • 1. In a large mixing bowl, whisk together 3/4 cup Almondaise (or your favorite mayonnaise) 1 TBSP lemon juice, 1 1/2 tsp honey, 1 tsp onion powder, 1/2 tsp sea salt, 1/2 tsp dill weed, and freshly ground pepper to taste.

  • 2. Add 4 cups shredded carrots, 1/2 cup finely sliced celery and 1/3 cup chopped green onion (or 2 TBSP minced fresh chives). Stir well, until evenly distributed.

  • 3. Butter bread on one side and broil or griddle buttered side.

  • 4. Place bread cooked side down and spread with spicy brown mustard (if desired) spread a generous cup of salad on each slice.

Tips

Almondaise is my homemade almond-based mayonnaise. It is a very light and tasty substitute for mayonnaise or sandwich spreads, but requires some light seasoning. You can find the recipe here on AllRecipes.
