This is our standard breakfast sausage. we have issues with pork so it makes a great stand-in.
Mix all together in a bowl with a fork, using a fluffing motion that will not compress the meat.
Form into patties and fry on each side until browned and cooked through.
Also freezes well. Place patties between waxed paper and freeze, then remove to a ziploc bag to store in the freezer until using. Cooking time increases from frozen state.
