Dolmathes
This is similar to many dolmathes recipes, but I've adjusted this one to my family's tastes.
Gorgonzola and Olive Stuffed Grape Leaves
These are the richest appetizers we have ever served. They are wonderful with wine and cheese! A version of this recipe was a gift from a friend and we have enjoyed it along with our guests. Use as much Gorgonzola as suits your taste!
Spiced Quinoa
This quinoa is flavored with aromatic Mediterranean and Indian spices for a quick and delicious side dish.
Tabbouleh
This bulgur salad is a lemony middle eastern treat! Bulgur is parboiled and dried wheat; soaking it in hot water is all the preparation required.

Greek Chicken
This delicious chicken is a tasty, light summer dish and is easy to make.
Greek Dip
This delicious dip was sold at a local meat market where I used to live. Since I no longer live in that area, I decided to try and duplicate the taste. I have substituted Italian 4-cheese blend for the Parmesan with success. For best flavor, let sit over night.
Falafels with Yogurt-Dill Sauce
These falafels are packed with flavor! Your family will love them! Wrap in tortilla and top with yogurt sauce. Add other toppings such as tomatoes, lettuce and shredded cheddar cheese.
Sausage and Rice Stuffed Acorn Squash
This dish will work with just about any sausage, but you may want to adjust the seasonings according to type. I love the way the flavors seep deep into the soft, sweet flesh of the squash-a great cold-weather meal!
