Easy Meatloaf

I've made this several times now. I do add extra onion, double the sauce, and add garlic and Worcestershire to the filling (though I forgot the garlic and Worcestershire last time and it was still okay). I used a meatloaf mix of ground beef, veal and pork (filling in some extra ground beef to make the 1.5 pounds). It was great!!!!

Barbie's Tuna Salad

Wow! I was so surprised that it didn't have fresh ingredients, really, but was happy since I made it on the fly. I used a 12 oz. fresh tuna steak which I seared first. I added heaping amounts of most of the spices (including accidentally quadrupling the onion flakes), and it was so delicious. Next time, some fresh onion and celery and maybe a bit of cayenne. Yum!!!!!!!

This was a huge hit!!! Here are my changes (everything else the same): Used an entire 10-oz. bag of spinach (MAKE SURE YOU SQUEEZE TO DRAIN FIRST!!!) SQUEEZE TO DRAIN ARTICHOKES, TOO, after rinsing thoroughly! Used an 8 oz. tub of sour cream Used an 8 oz. packet of cream cheese Two heaping tablespoons of olive-oil based mayo 3 Cloves of Garlic 1/2 Cup grated Romano Cheese Generous salt and pepper (I know, the cheese is salty, but you'd be surprised how much more salt it needs) Sprinkled about 1/2 cup mozzarella on top Baked for 30 minutes on convection, 375 degrees IT WAS PERFECT!

Spicy Tortilla Roll-Ups

This was pretty good. I have definitely more successful just dumping random things into a bowl of cream cheese and spreading it on a tortilla. The Tobasco was WAY too much...I love spicy and Tobasco in particular, but I am so glad I only but in 1 Tablespoon. I also added about 1/2-1 cup of shredded sharp cheddar, which helped cut the tobasco a lot.

D's Famous Salsa

This turned out great! I used fresh tomatoes instead of canned, and mixed canned serranos with a fresh jalapeno. I used a blender and it came out a creamy sauce, which I prefer. Highly recommend!

Baked Tortilla Chips

These are delish and SO easy! My modifications: I used the Pam coconut oil cooking spray and just sprayed the tortillas lightly. Then, I put a heavy amount of salt and a little cumin. For one batch, I added chili powder and they were great, but my salsa is pretty hot so I left it off after that. I skipped the lime/lemon. Super crispy and awesome.

Veracruz-Style Red Snapper

Used corvina (sea bass) instead and it was fantastic. Next time, I'll marinate the fish in some olive/caper/lemon juice ahead of time. Also, I forgot to salt/pepper the fish as I put it in the baking dish, so that would probably help. Served with spinach and homemade baked tortilla ships.

Spicy Slow Cooker Black Bean Soup

This is really good! I made the following changes: soaked the black beans overnight, cooked on high for 4 hours and low for 6, then added some blended up cherry tomatoes, half a can of tomato paste, and (already cooked) turkey sausage (also blended two cups of the black bean mixture and added back into the slow cooker), cooked on low for 30 minutes more. In my recipe, I didn't skimp on spice and it's not too spicy. I also added garlic because...it's garlic and should be in everything.
